Salted semi-hard Tzfat cheese made from fresh local sheep’s milk.
The cheese is salted externally. Hence, it’s saltiness may not be perfectly uniform.
To reduce the saltiness, you may rinse the cheese with water or use it as seasoning for salad or pastry instead of salt.
The cheese is made in a traditional craftsmanship as it has been practiced hundreds of years ago in the city of Safed.
In the past, the cheese was saltier and harder. The only change I have made to this cheese is reducing the amount of salt.
