Roll out puff pastry dough sheet on a lightly floured surface. Cut the sheet into two parts. Sprinkle olives and cheese on each portion (in the center, leaving enough space from the edges) the ratio is about twice amount of cheese as much as the olives amount. Roll tightly a cylinder from each part. Using a sharp knife, cut the cylinders into 2 cm thick slices. Place the puff pastry snails on a baking tray lined with parchment paper. Brush each snail with a beaten egg. Bake in the oven at 180 degrees for about 15 minutes, until the snails are golden brown.
