The roots of Pecorino cheese are deeply planted in Italy’s ancient cheesemaking tradition, where sheep’s milk cheeses were an integral part of the local food culture. At Hanan the Cheesemaker, we carry on the spirit of this tradition, using high-quality local sheep’s milk and a meticulous production process.

After two months of slow aging, the cheese achieves a firm yet pleasant texture, a balanced saltiness, and rich milky aromas with subtle nutty notes. At this stage, the Pecorino is at the beginning of its journey – retaining its freshness while already developing the depth and complexity characteristic of aged sheep’s milk cheeses.

Throughout the aging process, the cheese receives traditional hand care, including gentle saltwater washes that foster the development of its natural rind and build its distinct character. The rind formed over time is part of the natural aging process, contributing to the richness of the cheese’s aromas and flavors.

During aging, the lactose content naturally decreases, while the cheese serves as a natural source of high-quality protein and calcium. The local sheep’s milk from which it is crafted naturally contains A2 proteins, CLA fatty acids, Omega-3, Vitamin K2, and spermidine – ingredients studied in the context of balanced nutrition and healthy aging.

Alongside its traditional character and unique taste, Pecorino cheese fits beautifully into a diverse longevity-inspired diet, connecting to the culinary traditions of Mediterranean regions such as Sardinia, one of the world’s renowned “Blue Zones.”
