The ricotta cheese is made from the whey of Tom and Herut cheese. In the process of heating the whey, we remove the remaining protein and fat in it, collecting them in a basket and thus make a fresh, sweet cheese of velvety texture.
As this cheese’s taste is neutral, it is most suitable for cakes, pastries, ravioli fillings and more.
I like to eat it with Amarena cherries or natural honey.
